Hi people,
I have GCC installed, but there seem to be no header files.
When I try and compile a program, it says that it can't find any of the
header files I have included at the top.
These aren't custom, things like stdio.h and stdlib.h.
What package do I need to install in order to get these?

What distro are you running? If its Ubuntu, you need to install
linux-libc-dev, I'd say its the same for Debian as well.

I did that, but still no headers. Do I have to run anything after that?

Sorry, I was thinking of the wrong package. For Ubuntu/debian, its
libc6-dev.
