Hello.  I cannot remember how to turn off telnet, ftp, or things like 
that.  I vaguely remember ifconfig, or ccchkconfig.  Thanks in advance.

Which distro do you use? You may  want to look at /etc/inetd.conf and
comment out what you don't want. then do a ps x and get the pid of inetd.
then kill -HUP <pid>
